You are underselling this idea badly.

Remember that there are two very different time zones this Org is serving, that is 24 hours cover required. Given anything over an 8 hour shift for a barmaid is unfair, that's at least three we need. Factor in holidays and the real minimum is four.

Just two would be exhausting for the poor darlings.

Now ask yourself; in all honesty, would you really want to see them on their backs?
