Gidday Abe & welcome along.  Café Racer 14 eh?   Bit of a big ole heavy lump for that isn't it?  Or you just like that style?

Eyup,

Anyone remember Moonie's cafe racer 14 years ago? I think it was the one he got off Ciderman on the old Org.

Welcome aboard Abe. Think the 14 is a bit more suited to touring than Cafe racing, but each to their own & will be interesting to see the end result

I'm not sure its the right bike to café BUT it's about what YOU want.

Have a look on bikexif and search Yamaha xjr1300 (given they were sold until recently, there are many more of those) as well as gsx1400.  You'll get some inspiration / ideas from there for sure.

Thank you all for the welcomes and comments, on reflection cafe racer may not be right so i have decided instead it should be a muscled up version of a Bonneville.
I have a seat and sub frame and someone much wiser than me to make it all fit. What engine mods if any would you all recommend first?

I have read through and see a PC3 and PAIRS removal seems favorable.
