Video formats / uploading to youtube and vimeo

What format is best (read most compressed) for uploading to youtube or vimeo but still retaining decent picture quality?

What utilities are best for converting video file formats?

Do youtube or vimeo reformat to a different file type on upload?  If so which, and is it best just to use that format when uploading in the first place?

I found THIS page full of useful info. It is about Youtube only though.

I use GoPro Studio to edit my videos, but use an earlier version 2.0.0.285, as the latest version packaged with Quick is very unstable and seems to regularly crash during the conversion process on both my work and home laptops.

The end result is an MP4 video which seems to be reasonable quality on Youtube.
