OK people this is what I found regarding the header bolts.
I replaced my exhaust system with an aftermarket system, I replaced the original bolts with new ones and packed the threads with copper slip and tightened them up finger tight then a quarter turn, then after a few thousand miles I heard some error noises so after a bit of research I decided to give the bolts a bit of a tweek. I tightened them all up a bit until they bit and hey presto the noise was gone so I think the noise was a bit of a gas leak. So the moral of this story is I did not torque them up to the specified torque and they were not seized or tight, I just nipped them up and pinched them when needed. So no more seized header bolts.👍👌

Folk seem to have different ways they do this, but I always use new gaskets washers, and as you said, I check mine after a few heat cycles or rides.
