Title: Polished cover

I have polished my covers but they are nowhere near this - how do you get it that good?

I would say, very soft buffing wheel, high speed and low pressure of part when buffing. And compound have to be right. May same, what is used for stainless steel.

But I would bother to make them look like this (not anymore), unless bike is show-room bike :)

sanding is the key to this start with 400 grit wet and dry then work to up to thousand grit you can go higher .this will depend on what compounds you use and the cutting mops you have and then the last stage is polishing mops most can get a shine but the key is to get the depth so you can see the road when you park up  trees the bike at the side of you .most get the shine but the scratches and  imperfections show up .70% of your work will be with a heavy compound black or grey and  rough cutting mop  then drop the mop to a softer one and use whit compound this is for stainless steel but is great on ally . then use green and then blue compounds . use plenty of water and fairy liquid when sanding to do a set of engine cases 3 to 4 hours of sanding and put gaffer tape on your finger ends or they will be sore .try to sand cross hatched where you can.its hard to explain this  those that can do it will all have their own ways to get their it just trial and error what works and what deosent  I got it wrong so many times .
